Fresh tuna Carpaccio

Ingredients • 350 g of fresh tuna flesh
• 2 tablespoons balsamic vinegar
• 8 crushed juniper berries
• 4 tablespoons of extra virgin olive oil
• juice of a lemon
• Salt  
   How to prepare put in the freezer tuna flesh, not to freeze but cool down well so that it can be cut easily.
Cut very thin slices and place them on individual plates, in part to dissolve the salt in the lemon juice, then add the juniper berries.
Pour the mixture on slices of fish and let stand for 10 minutes.
At the time of serving the dish, drizzle with oil and wire d drops of balsamic vinegar.
